Hello friend! I hope you’re making it through the colder winter months with a little bit of sunshine and happiness in your hearts (wow that’s super cheesy, but I stand by it). I’m currently in Florida catering and participating in an amazing retreat with some fierce business womxn and thought I would share the recipe for the guac I made that’s been getting gobbled up daily.

I find in winter when things are a little grey and dreary and doomy and gloomy, using citrus to brighten up my meals makes life a little brighter and more delicious. It’s virtually impossible to smell the zest from a citrus fruit and not immediately be transported to a tropical destination.

This recipe is packed with healthy fats from avocados, which is a perfect way to snack while keeping your blood sugar and energy levels stable and happy. It’s also ridiculously simple to make, which is great for busy people who want to batch cook and have healthy, easy snacks always on hand.

This recipe is the perfect easy snack, side, spread, or dip to brighten up your day. It's loaded with tons of nutrients, loads of flavour, and is ready in under 5 minutes!

Ingredients
  • 2 large avocados nice and soft
  • 4-5 green onions finely chopped
  • 5 stalks cilantro finely chopped
  • 1 clove garlic finely minced
  • 1.5 limes zest & juice
  • 1/4 tsp. sea salt
  • 1/4 cup cherry tomatoes chopped (optional)
Instructions
  1. Peel avocados and add to medium sized mixing bowl.

  2. Add green onion, cilantro, cherry tomatoes, garlic, zest and juice of
    lime, and sea salt.

  3. Using a fork, mash the avocado, herbs, & limes together until slightly creamy and still a little chunky.

  4. Adjust sea salt and lime. You may want it tangier, so feel free to use the other half of the second lime.

  5. Set in the fridge for an hour then enjoy!
