Well hello friend! It’s been a while since I’ve hopped onto the old blog. Summer has been such a whirlwind of travel and sunshine and time with friends and family that recipe creation has fallen a bit behind.
However! I just bought a new house last week and the kitchen is my favourite room. It was the first room I set up and I wasted no time playing around with a new recipe for you. I had a ton of cilantro, a package of ground pork, and one sad little lime that needed using so I figured I could make something happen with that!
This recipe is packed with herbs and spices that provide a huge flavour punch! Cilantro is also great for helping the body’s natural detoxification processes, which makes it a great addition to your meals to help balance out the summer fun. 😉Â
I am also obsessed with anything that has toasted sesame oil in it, so obviously I had to add that to help round out the flavours. I threw these bad boys over a salad and they made a perfect summer dinner. You could also try them with this Avocado Ginger Lime Dressing (always a huge hit at my cooking classes!) or top with some sliced avocado and pickled ginger.Â
Enjoy!
- 1 lb. ground pork or turkey/chicken
- 1 lime zest and juice
- 3 shallots or ½ red onion diced
- 6 cloves garlic minced
- ½ bunch cilantro chopped
- 2 tsp. chili flakes optional
- 1 tsp. dried ginger or 1 tbps. Fresh ginger chopped
- 2 tsp. sesame seeds
- 2 tsp. toasted sesame oil
- 1 egg
- 1 tbsp. mustard
- 1 tsp. sea salt
- 3 tbsp. tapioca flour/starch
- 2 tbsp. coconut flour
- 2 tbsp. coconut oil divided

Heat a large frying pan over medium heat.

Combine all ingredients except coconut oil in a large mixing bowl and let sit for 5 minutes to allow coconut flour to absorb the moisture. If it's still a little wet add an extra spoonful of tapioca and coconut flour.

Roll into small balls then flatten into little patties.

Add half coconut oil to frying pan let heat for a few moments then place the pork patties into the oil.

Cook until browned on one side approximately 5 minutes depending on your stove.

Flip and cook another 5 minutes.

While cooking set out a plate and line it with paper towel.

As the patties finish cooking place them on paper towel to absorb any extra grease. You can also place them in the oven on a baking sheet to keep them warm while the rest cook.

Let cool and enjoy!
