Pretty in Pink Grapefruit Red Onion Vinaigrette

This recipe is a great combination of sour and sweet that helps support the liver and adds tons of brightness to any salad!

Ingredients
  • 1 lemon zest and juice
  • 1 grapefruit zest and juice
  • 2 tbsp. balsamic vinegar
  • 1 tbsp. ground or Dijon mustard
  • 2 cloves of garlic roughly chopped
  • ½ small red onion roughly chopped
  • 1-2 tbsp. maple syrup or honey
  • 1 cup olive oil
Instructions
  1. Combine all ingredients except olive oil in a large bowl or food processor. 
  2. Blend together (I use an immersion blender). 

  3. Once first 7 ingredients are combined, slowly add oil while continuing to blend. Add a pinch of salt to taste. 

  4. Allow to sit overnight in the fridge for best flavour.

Recipe Notes

Store in the fridge for 7-10 days.
