Ingredients
  • ½ cup wild or brown rice blend
  • 1 tbsp. olive oil coconut oil, or ghee
  • 1 can tomato paste
  • ¼ tsp. cayenne
  • 1 tsp. cumin
  • 1 tsp. ground coriander seed
  • 1 large onion diced
  • 6 cloves garlic chopped
  • 3 carrots chopped
  • 4 celery stalks chopped
  • 1 sweet potato chopped
  • 1 cup lentils of choice I like to use red lentils!
  • 6 cups water or broth
  • 1 tsp. sea salt
  • black pepper to taste
  • 3 lemons juice & zest
  • fresh cilantro for garnish
Instructions
  1. Cook wild rice blend following package directions and set aside.
  2. In a large saucepan heat oil over medium.
  3. Once bubbling, add tomato paste and spices stirring to coat fully. Let them toast for 30 seconds until fragrant.
  4. Add onion and garlic, stir to combine and cover for 2 minutes, until onions are softened.
  5. Add carrot, celery, & sweet potato, stirring until coated with spice mix then cover and let simmer another 1-2 minutes.
  6. Add lentils, water, sea salt, and pepper. Bring to a boil, then reduce heat to simmer until lentils are cooked through, about 25-30 minutes.
  7. Once lentils are softened, stir in wild rice, lemon juice & zest. Return to heat to simmer 2-3 minutes.
  8. Top with cilantro and enjoy!
