Now as some of you may have noticed, spring is in the air! Even in the northern tundra that is Saskatoon, we’ve been blessed with some beautifully warm and sunny days that promise spring is just around the corner. It’s pretty typical that with the warmer weather comes a more active social life and a desire to be outside as much as possible, which means way less time in the kitchen. Enter my crowd-pleasing Sweet Spring Fennel, Leek, and Walnut Salad that’s jam-packed full of nutrient goodness and provides a perfect satisfying fresh crunch to any meal. It’s a great one for when you’re trying to eat healthy on the go because so long as you don’t add the dressing it keeps quite well in the fridge for several days in an airtight glass container.
