Hi friends! I hope you’ve all been having a splendid week. I’ve been in Toronto soaking in Meghan Telpner’s culinary awesomeness at a Culinary Urban Retreat Intensive, so it’s been pretty spectacular! Nothing like getting back in the Pink Kitchen to inspire and motivate me to keep spreading the whole food diet love on the interwebs. I’m also on day 8 of my 28-Day Mind and Body Makeover and I’m feeling full of vim and vigour! So all in all, things aren’t too shabby at Nourished Headquarters (which incidentally is wherever I can find an interwebs signal).
Today I’m going to share my very favourite go-to smoothie for those days when I just don’t have time to whip up a full meal or if I know I’m going to be out of the house for an extended amount of time. Sometimes I don’t put the banana in if I’m going to leave it sitting for a couple of hours though because personally I find it can make it taste a little wonky. Anyhoo, this bad boy is chock-full of antioxidant goodness, plus it tastes like cake, so win-win! Let’s take a quick peek of our all-star cast.
These delicious little balls of goodness are an antioxidant powerhouse! Antioxidants help prevent inflammation in our bodies, which keeps our waistlines slim, our joints healthy, and our skin clear. Look for wild blueberries if possible, but organic is also a good option. President’s Choice sells giant bags of wild frozen blueberries for super cheap!
When combined with blueberries, the antioxidant capacity of cocoa is even stronger! Not only is cocoa an amazing source of AIs, but it’s also one of the highest food sources of magnesium, which is necessary for over 300 enzymatic reactions in the body and helps keep our muscles relaxed and our minds calm.
Bananas are a great source of potassium, a mineral which is necessary to regulate what balance in the body. They’re also a great source of healthy carbohydrates perfect for replenishing glycogen stores (basically our stored glucose molecules for energy) after a tough workout.
Full of healthy fats that have anti-viral and anti-fungal activities in our body (lauric and capryllic acid), coconut oil also helps keep us fuller, longer and instigates the burning of our stored body fat. Woohoo!!
So now that we know what we’re putting in our body and why, let’s take a look at the super simple recipe!
- 1 cup frozen blueberries
- 1 tbsp. cocoa powder
- 1 tsp. pure vanilla extract
- ½ banana
- ½ C coconut milk
- 1 scoop of Vegessentials
- 1 C cold water
- Combine all ingredients in a blender and mix together until smooth.
